Chicken Fajitas

Chicken Fajitas

Chicken breasts, flattened some

McCormick chipotle pepper marinade mix


Marinate overnight if possible following instructions on the back of the package.


Serve with:

Grilled onions

Red, yellow, and orange bell peppers

Black beans

Sour cream

Shredded cheese

Guacamole



Apple Dumplings

Pastry:

2 cups flour

1 teaspoon salt

⅔ cup vegetable shortening

5-7 tablespoons cold water

 

Filling:

3-4 Granny Smith or Pink Lady apples

1 cup sugar

2 teaspoons Vietnamese cinnamon (I purchase from local spice store.) or regular if you can’t find it.


Syrup: 

1 cup sugar

2 cups water

3 tablespoons Red Hots

4 tablespoons butter

Bring first 3 ingredients to a simmer until all Red Hots are melted. Add 4 tablespoons butter and stir.


Serve with:

Homemade whipped cream

 

Directions:

1. Mix flour and salt. Cut in shortening and water to form a pastry dough. Shape into 4 balls (or more if smaller dumplings are desired). Take each ball and roll out on floured surface.

2. Peel apples. Cut into small slices and put into cool water until ready to use.  

3. Mix sugar and cinnamon. Sprinkle 2 tablespoons over apples that are placed in the center of rolled out pastry. Fold pastry up around apples till it all meets at one center point. Pinch together to make a nice package.

4. Place dumplings into a 9”x13” pan. Preheat oven to 350 ° and make Red Hots syrup.

5. Pour Red Hots syrup over the top of dumplings. Bake until dumplings are brown and bubbly, around 30 minutes.
