Creamy Tortellini Vegetable Soup

I like to add 1 pound ground Italian sausage (Shredded chicken would be great too!) and zucchini. Grated provolone could be used as a substitute for the Parmesan. Bacon would be delicious as well.

(Note from Bess: This soup is AMAZING! Once I added the sausage and zucchini, I felt like the soup needed more broth as well. I added a bit more tomato paste, cream, and broth. Add until it has the ratio of broth to veggies/meat that you prefer. I also substituted more broth for the white wine. We didn't miss it even though wine would be delicious as well.)

Roasted Carrots (optional)- carrots, extra-virgin olive oil, honey, balsamic vinegar, minced garlic - Roast at 400 degrees for approximately 30 minutes.


Dessert -

Double Chocolate Brownies

 

 Ingredients:

2 boxes Ghiradelli double chocolate brownie mix

Mini semi-sweet chocolate chips

Powdered sugar


Serve with:

Vanilla ice cream


 Directions:

1. Mix two boxes, as directed and pour into an 8"x8" pan for extra tall brownies. Sprinkle mini semi-sweet chocolate chips on top before baking. Use cast-iron or glass pan. Disposable foil pan doesn't work as well.

2. Cook at same temperature as recommended on box. Brownies will take close to an hour to be done. Check every so often so you don't over-bake. When cool, sprinkle with powdered sugar.

Bulk Pie Crust Recipe

I also had to include this recipe that makes about 15 pie crusts! Toss the crusts in the freezer and make your next pie baking day a breeze.

 

Ingredients:

3 pounds butter or Crisco

5 pounds flour

4 cups ice water

2 tablespoons salt


Directions:

1. Mix salt into flour in a large bowl.

2. Cut butter/Crisco into flour mix until it resembles fine crumbs.

3. Pour ice water over the entire mixture.

4. Mix until thoroughly blended.

5. Divide into 15 (285g) balls. 

6. Toss in the freezer!
