Notes from the Appels from the show for when they prepare this amazing Greek menu!

Skewers, Peppers, and Tzatziki:

--Chili peppers, blackened & steamed (put in a paper bag to steam off peels), seeds removed, & sliced chopped fresh mint/fennel/basil, & salt, red wine vinegar & olive oil

--Pork, diced & seasoned w/ dried mint, dried oregano, salt, pepper, lemon juice, grated garlic, olive oil & put on skewers…

"love'em, baby'em, take care of 'em"

--Tzatziki, grated cucumber, salt & garlic in a mortar & pestle, dried mint, lemon juice, red wine vinegar, yogurt


Salad:

Rustic chop variety of tomatoes, red onion, cucumber (scratch w/ fork down side), green sweet pepper, fresh dill & mint, olives (remove stones and squash a little), salt, red wine vinegar, olive oil, mix with hands, chunk feta on top, little fresh oregano, finish with olive oil

"Do it, mean it, little bit of attitude"
