Greek Meatballs with Tzatziki

Recipes:

Greek Meatballs with Tzatziki


Serve with:

Rice

French fries

Salad, optional

Cookies, popsicles, or other dessert


Brunch Menu:


Savory Breakfast Muffins

Ingredients:

1½ cups flour

3½ teaspoons baking powder

1 tablespoon sugar

¼ teaspoon salt

1¼ cups milk

3 tablespoons melted butter

1 large egg

½ - ¾ cup cottage cheese

Browned ground sausage

Maple syrup 


Serve with:

Cinnamon Rolls

Cold brew

 

Directions:

1. Mix flour, baking powder, sugar, and salt together. Add milk, melted butter, egg, and cottage cheese to make pancake batter. Use an immersion blender to get rid of any cottage cheese lumps if you prefer!

2. Add cooked sausage and some maple syrup to the batter and then portion into greased muffin tin.

3. Bake at 350° for 20 minutes and then check. You may need a few more minutes to get lightly browned on top. Serve with a side of maple syrup. We like them best warm!
