Gluten-Free Focaccia
Salad and Dressing with Red Onions

Ingredients, Option 1:
½ red onion
¼ cup olive oil
¼ cup apple cider vinegar
1 teaspoon dried oregano
½ teaspoon salt
Ingredients, Option 2:
½ red onion
¼ cup olive oil
¼ cup balsamic vinegar
1 tablespoon honey
1 teaspoon grainy mustard
Directions:
1. Choose which dressing variation you prefer. Thinly slice half a red onion. Put in the bottom of your big salad bowl. Mix other ingredients on top.
2. Build your salad on top - lettuce, tomato, cucumber, and Parmesan. Avocado is great too.
3. Let sit until ready to serve and mix. The onions give their flavor to the dressing, and the dressing softens and sweetens the onions.
Brussels Sprouts with Lime Sour Cream:

Ingredients:
1 bag of Brussels sprouts - chopped in half
Olive oil
1 tablespoon chili powder
Salt & pepper to taste
Dressing:
½ cup sour cream/Greek yogurt (We love it with either.)
Juice & zest of one lime
2 pinches of salt (more to taste)
Directions:
1. Pour a little oil on baking sheet. Put in the oven at 425°F.
2. Prep Brussels sprouts - cut, and toss with oil, chili powder, salt, and pepper. Pour onto hot pan and return to oven.
3. Roast 15-20 minutes, until edges are crispy.
4. Meanwhile, make dressing. Serve Brussels sprouts with the lime sauce!
Note: Add chopped red peppers, red onions, or cooked bacon for even more fun!
