Gay Kimmel's Meatloaf

Gay Kimmel's Meatloaf - aka, Mamasita or Nani

Meatloaf: 1 pound ground beef

1/3 cup oatmeal

1/3 cup milk

1/2 green pepper, chopped (could be more if desired)

salt and pepper

1 egg

1/2 onion, chopped


Topping:

1/2-3/4 cup ketchup

2 tablespoons brown sugar

1 tablespoon mustard, optional

Serve with: Potatoes, baked or instant pot

Green salad OR Roasted veggies

Garlic bread

Directions:

1. Put the beef, oatmeal, milk, green pepper, salt and pepper, egg, and onion in a bowl and smoosh it all together using your hands/fingers.

2. Put it into a loaf pan or casserole dish.

3. Mix and top meatloaf with 1/2-3/4 cup ketchup, 2 tablespoons brown sugar, and 1 tablespoon mustard. Bake 1 hour at 350°.


(Double and freeze for another meal! Can be baked straight from the freezer - allow a bit of extra time in case it takes longer to cook.)
