Taco Bar

Ingredients:

Ground beef with taco seasoning

Marinated chicken (Lime juice, olive oil, and taco seasoning make a good marinade.)

Black beans with bacon grease cooked in a crockpot. Soak overnight and cook in the morning!

Sweet bell peppers, sauteed

Onions, sauteed

Tortillas

Chips

Toppings such as salsa, pico de gallo, hot sauce, guacamole, shredded lettuce, sour cream, cheese, jalapenos, lime wedges, etc.


Serve with:

Fruit Bowl

Dessert


Recommended desserts:

Can substitute all-purpose gluten-free flour if needed.


Chocolate Bourbon Pie

Ingredients:

2 eggs

1 cup sugar

½ cup melted butter

4 tablespoons bourbon

¼ cup cornstarch

1 cup chopped pecans

1 cup semi-sweet chocolate pieces

1 (9-inch) pie shell (A store-bought gluten-free pie shell can be used if needed.)

 

Directions:

1. Preheat oven to 350°.

2. Beat eggs, gradually adding sugar and cornstarch. Add butter and bourbon. Stir in pecans and chocolate bits. Pour into pie shell.  

3. Bake 45 minutes.

Note: Best served warm.

Savory Breakfast Cookies - Shelly doesn't have a set recipe. She googles for ideas and then makes her own version. Below are some good savory breakfast cups I've tried. If you use the foil liners I recommend down below (Take out the paper!), these make clean-up a dream! For these recipes, be sure to spray with non-stick spray to peel the foil liners off easily.


 Recommended items:



(I find these in my local grocery store for between $1-$2 per container. DISCARD the paper liners and use the foil ONLY. The foil peels off very easily. The paper will often stick and are not needed as a second layer.)


NOTE: Muffins, cupcakes, and other things made with butter won't stick. If making the above egg casseroles, spray these with a non-stick spray or they will stick!
